The kitchen has been the center point and heart of the home. The early kitchens had a wood stove and a sink. Some had indoor plumbing and as the technology brought new appliances kitchens adapted to them.
Here in Washington there are kitchens which have been changed many times and a marriage of old and new are the results. Understanding how things worked 100-150 years ago, and how the kitchen grew into the modern kitchen, helps the inspector to recognize problem areas and offer a possible solution to the problem.
